Further studies aiming fortification or a mixture with different proportions of vegetable milk are ideas on how to try to equate them with cow's milk.
It was realized that the composition of the plant-based milk and the cow’s milk are different, and chemical composition analysis could better reveal these differences. It is also observed that rice milk is different from the others, tending to have dissimilar characteristics to other milk studied. In these cases, the missing data were estimated using a built-in function that replaces the missing value with the mean of each factor investigated. Some data in Tables S1 and S2 were not discussed. It was noticed that whole milk tends to have a higher value of protein, ash, energy value and luminosity (L*), while vegetable milk, except rice milk, tends to have more lipids, redness (a*) and yellowness (b*). After data standardization, PCA results were obtained using XLSTAT 2014 software, following the strategy adopted by Younes et al. In the analysis of major components, the first two major components (CPs) were responsible for 74.46% of the variance of the data.
FORMATION XLSTAT SOFTWARE
The cluster analysis performed using XLSTAT software (Addinsoft Inc.), revealed the formation of four clusters, one formed by whole milk, the other by skimmed milk, one by rice milk and one by the other five plant-based milk. Moisture, ash and lipid analyses were performed in triplicate according to Adolfo Lutz (Instituto Adolfo Lutz, 2008), protein analysis was carried out by the Bradford method (Bradford, 1976), color analysis was performed by digital colorimeter, carbohydrates were obtained by difference and the total energy value according ANVISA (BRASIL, 2003). Six samples of vegetable milk (soybeans, rice, sunflower seeds, hazelnuts, cashew nuts and Brazil nuts) were prepared with Vegan Milk Machine (Viva Smart Nutrition, Polishop).
The aim of this study was to compare whole and skimmed cow’s milk sold commercially with vegetable milk.
